Moritz & Moritz 20 cm with acacia handle review

A 20 cm blade in German knife steel with an acacia wood handle — the only knife in this hub with a wooden grip at this price.

The bottom line The handle is the reason to choose it, and it is also the part that sets the care rules.

What you are getting

A 20 cm chef’s knife in German knife steel with an ergonomically shaped acacia handle.

The handle

Wood is warmer in the hand than moulded plastic and it looks better on a rack. It also sets the care rules: hand wash, dry, and keep it out of a sink of water. That is the whole trade.

What the listing says about the steel

That it is German knife steel. There is no grade and no hardness figure, so expect the behaviour of a European stainless cutlery steel: easy to sharpen, forgiving, and wanting a steel weekly.

Where it sits

Mid-range in this hub. Above it, the knives publish hardness and origin; below it, they publish nothing at all.

What we like, and what we don't

Strengths

  • Wooden handle, which many people find warmer and more comfortable than moulded plastic
  • German knife steel, stated as such
  • A genuine all-rounder shape at a mid price

Compromises

  • A wooden handle should not go in the dishwasher — the listing does not warn about it
  • No hardness figure or steel designation
  • Wood moves with repeated wetting, and handles loosen over years

Questions people actually ask

Can a wooden-handled knife go in the dishwasher?

No. Repeated wetting and drying swells and shrinks the wood around fixed rivets until it loosens or splits. Hand wash and dry it, which takes thirty seconds.

Is "German knife steel" a specification?

It is a description of origin rather than a grade. Without a designation or a hardness figure, it tells you the knife is made from a European stainless cutlery steel and no more.
