Victorinox Fibrox 15 cm (5.9 in) flexible review
A 15 cm (5.9 in) straight flexible blade with the Fibrox handle — the grip that professional kitchens buy Victorinox for, on the knife most likely to be used with wet hands.
What we would actually buy Bought for the handle. On a knife used on wet fish, that is the correct reason.
What you are getting
A 15 cm (5.9 in) straight, narrow, flexible blade with Victorinox’s Fibrox handle.
The handle, again
This is the knife where grip matters most: hands covered in fish or chicken, a flexible blade under pressure, and a bone underneath. Fibrox is textured molded plastic, it holds when wet, and it is the reason these knives are everywhere in professional kitchens.
The geometry
Narrow and flexible, which lets the blade run along a ribcage and lift a fillet whole. It is not the knife for driving between joints — that wants stiffness.
What is not published
Steel and hardness. Expect the softer European behavior: quick to sharpen, needing it often, and forgiving when it meets a bone.

What we rate, and what we do not
Strengths
The Fibrox handle grips when wet and greasy, which is exactly the condition this knife works in
Narrow and flexible: the right geometry for fish
Professional standard at a domestic price
Compromises
No steel grade or hardness published
Straight rather than curved, so it follows a bone less readily than a curved blade
Soft steel needs frequent honing

The questions that come in
Straight or curved for fish?
Straight and flexible suits filleting along a ribcage; curved suits following the contour of a joint. For fish specifically, straight and flexible is the classic.
What is Fibrox?
Victorinox’s textured molded handle material. It is not beautiful and it holds when wet and greasy, which is why professional kitchens standardize on it.

Close prices, same category: comparable cookware and knives. We keep only the specifications all of them publish, because a column with gaps compares nothing.

What buyers actually choose
Amazon reports what buyers took in the month before this page was last checked: at least 100.
The figure is a floor, rounded by Amazon, and read through Keepa — it says what buyers picked, not what a maker claims.
Sources
Specifications: the manufacturer sheet for cookware and kitchen knives and the matching Amazon product page. Prices and availability: Keepa. Every figure on this page names its source.
The only knife in this hub that publishes both its steel designation and its hardness: X55CrMo14 at a stated 56 HRC, flexible, with a curved blade that lengthens the cutting stroke.
Best for: Skinning, trimming sinew and separating poultry.
