SYOKAMI 26.9 cm (10.6 in) offset review

The top of this hub and the only offset blade in it: the handle is raised above the blade so knuckles clear the board, and the serrations reach the board along their whole length.

What we would actually buy The offset handle solves a real problem that only shows on the last centimeter of every cut.

What you are getting

A 26.9 cm (10.6 in) serrated bread knife with an offset, raised handle and serrations stated at twice the width of a conventional pattern.

The offset

The handle sits above the line of the blade, so on the last centimeter of a cut your knuckles are clear of the board. Anyone who has finished a loaf by pressing their fingers onto a board knows exactly what this fixes.

The serration pattern

Wider than usual, which suits the hard crust of a home-baked sourdough. The trade is a slightly rougher cut on a soft supermarket loaf and on cake.

Storage

An offset blade does not sit well in a standard block. Plan for a magnetic rack, a drawer with a guard, or a long slot.

What we rate, and what we do not

Strengths

  • Offset handle means the last centimeter of the cut does not put knuckles on the board
  • 26.9 cm (10.6 in) handles a large round loaf in one stroke
  • Wider serrations, which suit hard artisan crusts

Compromises

  • The most expensive bread knife here
  • An offset blade is awkward in a standard knife block
  • Wide serrations are less kind to soft loaves and cake than fine ones

The questions that come in

What does offset actually solve?

On a long cut, the hand descends with the blade and meets the board before the loaf is through. A raised handle keeps the knuckles clear for the whole stroke.

Are wide serrations better?

For hard sourdough crusts, yes — they bite rather than skate. For soft loaves and cake they tear slightly more than fine serrations do.
