The best gas planchas for 2026

A plancha is a solid hot plate rather than a grate, which changes what it can cook: fish, prawns, sliced vegetables and eggs all stay where they are put, and fat drains to a channel instead of dropping onto flame. That removes flare-ups entirely. Plate thickness is the specification that matters, because a thin plate loses its temperature the moment cold food lands and a thick one carries on searing. Enamelled steel, cast iron and chrome-steel plates each behave differently on cleaning and on sticking. Independent burner zones let one end rest while the other sears. We compare plate material and thickness, burner zones, drainage, gas supply and cleaning.

Across gas planchas, who each type suits

Fish and seafood
The solid surface holds the juices and stops small pieces falling between the bars. That is the plancha’s great advantage over the grill.
Vegetables and Mediterranean cooking
A plancha sears without the smoke of flaring fat, which makes it usable where a barbecue is not.
Large gatherings
A two-zone plancha lets you sear on one side and hold on the other. That is what makes serving several people possible.

The trade-offs to weigh on gas planchas

Thickness against heat-up time
A thick plate holds the heat and takes time to warm up. A thin plate is ready fast and collapses on contact with cold food.
Steel against stainless
Rolled steel conducts better and has to be seasoned then oiled or it rusts. Stainless does not rust and heats less evenly.
Enamelled against bare
An enamelled coating cleans easily and chips under thermal shock. A bare plate is seasoned, cleaned by deglazing and lasts indefinitely.

What gets asked about gas planchas

Does a steel plancha need seasoning?

Yes, like a cast iron pan: heat, thin oil, repeated a few times. Without seasoning, bare steel rusts and sticks.

How do I clean a plancha?

By deglazing with water or an ice cube on the plate while still hot, then a scraper. The residue comes away on its own and a film of oil then protects the surface.

What thickness should I choose?

A thick plate holds its temperature when cold meat arrives; a thin plate heats fast and loses its heat at the first contact. Thermal mass is the decisive criterion.

What is the difference from a barbecue?

The surface is solid: the juices stay, nothing falls through, the fat does not flare. It is cooking by contact, not by radiation.

Can it be used indoors?

Never with gas: the combustion produces carbon monoxide. Electric planchas exist for indoor use.

Does the steel rust?

Yes, as soon as it stays damp without oil. Complete drying and a film of oil after each use are enough to avoid it.

At what temperature should I cook?

Very hot to sear, gentler to finish. A two-zone plancha allows both at once.

Do I need a cover?

Outdoors, it is what best protects the plate and the burners. Damp is the only real enemy of a steel plancha.

The essentials of gas planchas

Plate thickness decides the thermal mass, and thermal mass decides the sear. Season the steel, deglaze hot with a scraper, dry and oil after every use — and never a gas plancha indoors.
