WMF Durado 28 × 28 cm (11 × 11 in) review

A square coated grill pan in Cromargan 18/10 stainless with a ceramic coating, stated heat resistant to 400 °C (752 °F) and oven safe, and explicitly matched to a 22 cm (8.7 in) hob ring.

What we would actually buy The specification is the most complete in this hub. The coating is the part that will age first.

What you are getting

A 28 × 28 cm (11 × 11 in) square grill pan in WMF’s Cromargan 18/10 stainless with a ceramic nonstick surface, 5.3 cm (2.1 in) deep, stated heat resistant to 400 °C (752 °F), and with a stainless handle for high-temperature use.

The figure nobody else publishes

WMF states the pan is optimal for hob rings of Ø 22 cm (8.7 in). That is the single most useful line in this hub: it tells you whether the pan matches your hob before you buy it, which is the question that decides how evenly any pan cooks.

The coating question

A ceramic surface on a grill pan is a compromise. Grill marks come from high heat, and high heat is what ages a sol-gel ceramic layer fastest. The pan will work well and the surface will not stay as it is.

Against the iron pans here

Lighter, easier to clean, no seasoning, and it will need replacing eventually. The cast iron pans in this hub are heavier, need care, and do not wear out. That is the whole choice, and price is not the deciding part of it.

What we rate, and what we do not

Strengths

  • Publishes the hob ring diameter it is designed for — almost nobody does this
  • Stainless handle and a 400 °C (752 °F) rating, so the oven is genuinely available
  • Square format with 5.3 cm (2.1 in) of depth, which contains spitting fat

Compromises

  • The most expensive pan in this hub
  • A ceramic coating on a grill pan is the surface least suited to very high heat over time
  • Ceramic coatings commonly lose their release faster than PTFE

The questions that come in

What is the 22 cm (8.7 in) figure?

WMF states the pan is optimal for hob rings of Ø 22 cm (8.7 in). It is the most useful number in this hub, because matching pan to ring is what decides how evenly any pan cooks.

Will the ceramic coating last?

Grill marks come from high heat, and high heat is what ages a sol-gel ceramic layer fastest. The pan will work well and the surface will not stay as it is — which is true of every coated grill pan.
