SHARPAL Angle-adjustable system, 10°–35° review

A guided system with a genuinely adjustable angle from 10° to 35°, four diamond plates and a whetstone — the only sharpener here that can match a Japanese 15° edge.

What we would actually buy The only sharpener here that respects the angle a knife was ground at. For hard Japanese blades that is not a luxury.

What you are getting

A guided sharpening system adjustable from 10° to 35°, with four monocrystalline diamond plates at 220, 325, 600 and 1000 grit, plus a whetstone — seven pieces in total.

The adjustable angle

The reason this exists. Every pull-through in this hub is fixed near a Western angle, and using one on a 15° Japanese blade destroys the edge it was bought for. This matches whatever the maker ground.

How it works

The angle is set by the distance between blade and abrasive rather than by a clamp position, which the maker states gives fine adjustment. The result is repeatable in a way freehand is not.

The honest caveat

It is a session, not a moment. Setting up, working through four grits and finishing on the stone takes time — and it produces an edge the pull-throughs in this hub cannot.

What we rate, and what we do not

Strengths

  • Adjustable 10° to 35°, so it fits Japanese and European blades alike
  • Four diamond grits plus a whetstone
  • The precision of a stone with the repeatability of a guide

Compromises

  • By far the most expensive sharpener in this hub — several times the others
  • Slower than a pull-through; this is a session rather than a moment
  • More setup than most households will do

The questions that come in

Why does an adjustable angle matter?

Because a fixed 20° device reprofiles a 15° Japanese blade, removing the thin edge it was bought for. An adjustable system matches whatever the maker ground.

Is it faster than freehand?

No. It is more repeatable. Freehand is quicker once learned; a guided system gives the same result every time from the first attempt.
