Two products from a butchery-trade maker, and both publish the number their category turns on.
The knife
15 cm (5.9 in), X55CrMo14, stated 56 HRC, flexible with a curved blade and an ErgoGrip handle. A named alloy and a hardness figure is the complete specification for a boning knife, and 56 HRC is the correct answer for a blade that has to flex without snapping.
The steel
30 cm (11.8 in) of blade length with a sapphire cut and a stated 65 HRC surface. The surface hardness is what matters on a honing steel: it must be harder than the blade it realigns, and 65 against a typical 56–58 blade is comfortably so.
Why both numbers together are the point
A honing steel softer than the knife does nothing. Publishing both, in the same range, is what lets you check the pairing rather than assume it.
The one to look at first
