Topbooc 26 cm (10.2 in), 5 L enamelled vs Tefal Secure 5 Neo 6 L

Should I braise slowly in iron, or quickly under pressure?

Both cook tough cuts until they surrender. One does it over hours in an oven and also bakes bread; the other does it in a fraction of the time and is a sealed pressure vessel with a seal that has to be replaced. The choice is about time, and about whether you want a pot that also does other things.

Buy the Topbooc if you want one pot that braises, roasts and bakes bread, and if the hours are part of the appeal rather than the obstacle. Enamelled cast iron needs no seasoning, holds acidic food indefinitely, and has no part that wears out — the trade is that enamel chips if you drop it.

Buy the Tefal if time is the constraint. Six liters, two cooking levels and a stated thirty-year tested life, in stainless that goes in the dishwasher. Before you buy any pressure cooker, check that its replacement seal is still sold — this site lists pressure cooker seals for WMF, Silit, Fissler and Tefal, and a cooker whose seal has been discontinued is a pot.

The questions that come in

Can a pressure cooker replace a Dutch oven?

For braising, largely. For bread, roasting with a lid off, or anything that wants to reduce, no — it is a sealed vessel and reduction needs evaporation.

How often does the seal need replacing?

Makers commonly say every one to two years, or as soon as it hardens, cracks or stops sealing. It is safety equipment, and a tired seal is not something to persevere with.

Is a pressure cooker safe?

Modern cookers have pressure-locked lids that cannot be opened while there is pressure inside, and shielded safety valves. Follow the manual on maximum fill — two-thirds at most, and less for anything that foams.
