DE BUYER MINERAL B 24 cm (9.4 in) carbon steel review
The one pan in this hub with no coating at all: French carbon steel protected with beeswax, seasoned by the user, with a riveted handle angled away from the heat and a stated lifetime guarantee.
What we would actually buy The only pan here that improves with age. It asks for one hour of setup and then asks for nothing.
What you are getting
A 24 cm (9.4 in) French carbon steel crêpe pan from de Buyer’s MINERAL B range, protected in transit with beeswax, with a riveted handle angled up and away from the flame, and a stated lifetime guarantee.
The first hour
The beeswax must come off: hot water, detergent and a scrubber until the surface is dull grey. Then two or three thin seasoning rounds — a film of oil wiped almost dry, heated until it smokes and stops. Skip this and the pan will never behave, which is the commonest complaint about carbon steel and is entirely avoidable.
After that
It improves. Every crêpe adds a little to the surface, and a pan that has made a hundred crêpes releases better than any coating in this hub. It also takes far more heat than a coated pan, which is what a thin crêpe wants.
The care
Wipe out, dry on the heat, trace of oil. Never put away wet. That is the entire maintenance, and it is the price of a pan that has no end of life.

The questions that come in
What has to be done before first use?
The beeswax protection must be scrubbed off with hot water, detergent and a scrubber until the surface is dull grey, then the pan is seasoned with two or three thin rounds of oil. Skipping this is the commonest complaint about carbon steel and is entirely avoidable.
Will it rust?
If it is put away damp, yes — it is bare steel. Wipe it out, dry it on the heat, and leave a trace of oil on the surface. That is the whole maintenance.
