GSW Gourmet Granit universal roaster review

A cast aluminum roaster with a multi-layer nonstick coating and the maker’s FerroTherm base, at the entry price of this hub — lighter than iron and far less to look after.

What we would actually buy The light, easy alternative to cast iron. Its coating is the part that decides how long it lasts.

What you are getting

A cast aluminum roaster with a multi-layer nonstick coating, GSW’s FerroTherm base, and a lid, stated for roasting, braising, boiling and steaming.

Weight against mass

Aluminum is a fraction of the weight of cast iron, and that is why people use it. What it gives up is thermal mass: meat browns less aggressively because the pot cools when cold food arrives.

The coating in a braising pot

A roaster spends hours holding wet, sometimes acidic food at temperature. That is harder on a coating than frying is, and it is the reason a coated roaster is a shorter-lived object than an enamelled iron one.

What is missing

An oven temperature and a capacity. Both are basic figures for a roaster, and neither is published.

The questions that come in

Is coated aluminum a real alternative to cast iron?

For weight and convenience, yes. For thermal mass — the property that browns meat properly — no. It is a different pot doing a similar job more easily and for fewer years.

Can it go in the oven?

The maker states it is for roasting, which implies an oven, and publishes no temperature. Without a figure nothing is claimed here; check the listing before a hot oven.
