Tefal Virtuoso 28 cm (11 in) review
The only pan in this hub that publishes an oven limit: 250 °C (482 °F). Uncoated, textured interior, riveted stainless handle, and stated dishwasher safe.
What we would actually buy The published oven limit is worth more than any coating claim in this hub. It tells you exactly what the pan can do.
What you are getting
A 28 cm (11 in) uncoated stainless pan with a textured cooking surface, a riveted stainless handle, and a stated oven limit of 250 °C (482 °F). That last figure is the reason to prefer it: it is the number that tells you a steak can be seared on the hob and finished in the oven without guesswork.
The textured interior
Tefal states the unsealed, textured surface suits meat and vegetables browning evenly. In practice a textured stainless surface releases food slightly earlier than a mirror finish, and it holds a fraction more fond — which is fine for a pan sauce and marginally more work to deglaze.
What it asks of you
The same as any stainless pan: heat first, then oil, then dry food, then leave it alone until it releases. There is no coating doing that work for you.
What is not published
Base construction. Whether the conductive layer is a disc or runs up the walls changes how the pan behaves when reducing, and the listing does not say.

What we rate, and what we do not
Strengths
Publishes an oven limit — 250 °C (482 °F) — which almost no pan in this catalog does
Textured interior, which the maker states helps even browning
Dishwasher safe and uncoated, so the machine has nothing to attack
Compromises
No base construction or thickness published
Textured surfaces are slightly harder to deglaze cleanly than a mirror finish
Like all uncoated stainless, it needs the heat-then-oil-then-food order
A listing is not an offer: the reference exists on these stores, availability changes daily.

The questions that come in
What does the textured interior change?
The maker states it helps meat and vegetables brown evenly. In practice a textured surface releases food slightly earlier than a mirror finish and holds a little more fond, which is good for a pan sauce and marginally more work to deglaze.
Is 250 °C (482 °F) enough for finishing in the oven?
It covers every domestic roasting temperature. The figure matters because it is published: most pans state "oven safe" without a number, which tells you nothing about a grill or a hot oven.

The pan at the top of this hub, and the only one with a measuring scale inside: uncoated 18/10 stainless, made in Germany, stated oven safe to 230 °C (446 °F), with cold metal handles and an extra-large pouring rim.
Best for: A pan bought once, for someone who reduces sauces and wants to see how far.
28 cm (11 in) · 18/10 stainless, uncoated · Thermo-Fusion induction base · riveted cast stainless handle · oven safe
An uncoated 18/10 stainless pan with a riveted cast stainless handle, and a listing that teaches the water-droplet test rather than assuming you know it.
Best for: A second pan, for searing and pan sauces, alongside a coated one for eggs.
