WMF Provence Plus 24 cm (9.4 in), 8.8 L review

An 8.8 liter uncoated stainless pot that publishes its height, its oven limit and the hob ring it is designed for — and has a lid that seals well enough to steam vegetables.

What we would actually buy The right proportions and the most complete set of published figures. That combination is rare.

What you are getting

A 24 cm (9.4 in) uncoated Cromargan 18/10 pot holding 8.8 liters, 20.5 cm (8.1 in) high, stated oven safe to 250 °C (482 °F) and matched to a 22 cm (8.7 in) hob ring.

The proportion

24 cm (9.4 in) across and 20.5 cm (8.1 in) high is tall relative to its width, which is what a stock wants: less surface exposed to the air, so hours of simmering lose less liquid than a wide pot would.

The lid

WMF states it closes well, and on a stockpot that is the feature — a well-fitting lid is what lets vegetables steam and a stock hold its level.

The published figures

Volume, height, oven limit and ring diameter. Four numbers that answer four real questions, and most listings in this category publish none of them.

What we rate, and what we do not

Strengths

  • Publishes diameter, volume, height, oven limit and ring diameter
  • The tall, narrow proportion that suits stock rather than reduction
  • Uncoated 18/10, so nothing wears out

Compromises

  • No base thickness figure
  • The glass lid will have a lower oven limit than the 250 °C (482 °F) stated for the pot
  • Dearer than the larger pots below it

The questions that come in

Why does tall and narrow matter?

Less surface is exposed to the air, so a long simmer loses less liquid. A wide, low pot reduces fast, which is right for a sauce and wrong for a stock.

Can it go in the oven with the lid on?

The 250 °C (482 °F) figure is for the pot. A glass lid carries its own lower limit, which is not published here — treat the lid as the constraint.
