WMF Durado 28 cm (11 in) wok review

A coated stainless wok on WMF’s TransTherm universal base, stated heat resistant to 400 °C (752 °F), and matched by the maker to a 22 cm (8.7 in) hob ring.

What we would actually buy The sensible coated wok for induction. The ceiling is the coating, not the pan.

What you are getting

A 28 cm (11 in) wok in Cromargan 18/10 stainless with a ceramic nonstick interior, on WMF’s TransTherm base, stated heat resistant to 400 °C (752 °F) and matched to a 22 cm (8.7 in) hob ring.

Why the ring figure matters more in a wok

A wok’s shape assumes heat wrapping up its sides. A domestic ring heats a circle on the bottom, and everything above that circle is a holding area rather than a cooking surface. Knowing the pan is designed around a 22 cm (8.7 in) ring tells you exactly how much of it will be hot.

The coating and the technique

Stir-frying wants very high heat and constant movement. A ceramic coating handles the movement and caps the heat. The practical answer is to cook in two batches rather than filling the wok, which a domestic hob wants anyway.

Against a carbon steel wok

Carbon steel takes more heat, seasons, and needs looking after. This takes less heat, needs nothing, and washes up. Neither is wrong; they are different kitchens.

What we rate, and what we do not

Strengths

  • Works on induction, unlike the wok below it in price
  • Publishes the hob ring diameter it suits
  • Stainless body with a coated interior, so the outside does not stain

Compromises

  • A ceramic coating limits how hard a wok can be driven
  • No weight or base thickness published
  • A flat-based wok on a domestic ring heats the bottom and not the walls, whatever the base

The questions that come in

Why does the hob ring diameter matter in a wok?

A wok’s shape assumes heat wrapping up its sides. A domestic ring heats a circle on the bottom, and everything above it is a holding area. Knowing the pan suits a 22 cm (8.7 in) ring tells you how much of it is actually hot.

Is a coated wok a compromise?

Yes, and a deliberate one. It handles constant movement and it caps the heat. Cooking in two batches rather than filling the wok is what a domestic hob wants in any case.
