SYOKAMI

Raised handles, on both blades

Two products, and the same geometry argument runs through both.

The bread knife

26.9 cm (10.6 in) with an offset raised handle and double-width serration, so the full length of the edge contacts the board. A straight-handled bread knife runs out of clearance on the last centimeter of a loaf and your knuckles hit the board; an offset one does not.

The steak knives

Six, in Japanese high-carbon stainless with a Damascus-look finish and a raised blade design.

The disclosure worth noticing

The steak knives are described as Damascus-look. That is a finish rather than a forged lamination, and saying so is more honest than the listings that leave it ambiguous. Compare with the brands here that state their pattern is forged.

The one to look at first

The bread knife, for the offset handle — it is the shape that solves an actual problem rather than a decorative one.

Every SYOKAMI product we have reviewed

  • SYOKAMI 26.9 cm (10.6 in) offset

26.9 cm (10.6 in) · offset raised handle · full serration contact with the board · double-width serrations

The top of this hub and the only offset blade in it: the handle is raised above the blade so knuckles clear the board, and the serrations reach the board along their whole length.

Best for: Home bakers with large round loaves and hard crusts.
