Victorinox

Fibrox, and nothing you are paying for that you cannot see

Five products: a filleting knife, a santoku, a paring pair, shears and a honing steel.

The position

Light, stamped, stainless, with a grippy handle and no decoration. The 15 cm (5.9 in) filleting knife is a straight flexible blade on a Fibrox handle; the 17 cm (6.7 in) santoku has a granton hollow edge and is described as light and balanced. There is no bolster, no forged spine, and no premium attached to either.

Why professionals use them

Because a light knife is less tiring over an hour, a Fibrox handle grips when wet, and losing one costs very little. That is a coherent argument, and it is the opposite of the Damascus argument elsewhere in this catalog.

Where it is ordinary

The honing steel is a 20 cm (7.9 in) chromed bar with a medium-fine cut and a plastic handle. It works; the 30 cm (11.8 in) sapphire-cut steel in the same hub publishes considerably more.

The one to look at first

The pair of 8 cm (3.1 in) paring knives. Two of the most-used knife in any kitchen, for less than one of most things in that hub.
