SHARPAL

Monocrystalline diamond, and an angle you can set

Two sharpening tools, and both publish what a sharpening tool should.

The adjustable system

Seven pieces, adjustable from 10° to 35°, with monocrystalline diamond plates at 220, 325, 600 and 1000. A published angle range is the whole argument for a guided system: it lets a 15° Japanese edge and a 20° European one be sharpened on the same jig.

The diamond plate

Dual grit at 325/1200, monocrystalline diamond on a 0.9 cm (0.4 in) steel base with a non-slip storage base.

Why the steel base matters

A diamond plate must stay flat. Bonded to 9 mm (0.35 in) of steel it does; on a thin substrate it can bow, and a bowed plate puts a curve in an edge that no amount of technique removes.

The one to look at first

The 325/1200 plate. Diamond cuts hard modern steels that a natural or ceramic stone struggles with, and it never needs flattening.
